SLOW COOKER PORK WITH APPLE SLAW


INGREDIENTS

• 2 pound pork loin

• 2 yellow onions

• 2 cippolini onions

• 1 T minced garlic

• Butter

• Olive oil

• Salt & pepper

• 2 T Aleppo

DIRECTIONS

1) Generously rub 2lb. pork loin with coarse salt, pepper and Aleppo. Massage into meat, flip and repeat.

2) Sear both sides of the pork in olive oil and butter mixture on medium high heat for 5 minutes until browned.

3) Cut 2 yellow onions and 2 cippolini onions into big chunks and place in slow cooker. Add 1 tablespoon of minced garlic. Set slow cooker on medium high for 4 hours.

4) Place the pork fat side up in the slow cooker so the fat trickles down and makes a sauce. Try to push onions to the sides as much as possible. Put lid back on the cooker.

5) Optional for a richer sauce: When you have 30 minutes left on the slow cooker, take out most of the sauce and onion mixture, put into a sauce pan. Simmer on medium heat and add 1/2 cup good red wine. Let flavors emulsify for about 10-15 minutes, stirring frequently.

6) Add sauce back to slow cooker and finish cook time. Shred or slice meat so it soaks up the sauce.

APPLE SLAW

INGREDIENTS

• 1 honey crisp apple

• 2 handfuls of arugula

• 1/2 T Olive oil

• 1/2 T White balsamic

• salt & pepper

DIRECTIONS

1) Thinly cut up one apple into strips (I prefer honey crisp apples).

2) Mix with two handfuls of arugula.

3) Make the sauce: equal parts olive oil and white balsamic, salt and pepper to taste.
