MAMA'S WHITE BEAN SALAD
This white bean salad is one of my favorite healthy side dishes that’s even better the next day! It’s top of my list when I meal prep for the week because it’s so cheap and easy.
INGREDIENTS
• 2-3 cans of small white beans
• 1 lemon
• 1/2 red onion
• handful of Italian parsley
• olive oil, salt & pepper
DIRECTIONS
1) Rinse and drain 2-3 cans of small white beans and add to bowl.
2) Make the dressing: juice from one lemon (to taste, depending on the size, 1-1/2 lemons may be needed), small drizzle of olive oil and a handful of chopped Italian parsley.
3) Finely dice 1/2 red onion.
4) Add salt and pepper to taste.
Best served at room temperature. Enjoy!
