PAN-SEARED SALMON

INGREDIENTS

• 2 slices of salmon

• 1 tablespoon of fresh parsley

• 1 shallot

• 1 lemon

• olive oil

• butter

• salt & pepper to taste

DIRECTIONS

1) Dress two pieces of salmon generously on one side with salt, pepper, 1 tablespoon of chopped parsley, 1 chopped shallot, and the zest of 1 lemon and juice of half the lemon. Save the other half of the lemon to squeeze on top of the salmon when serving.

2) Add salmon to a preheated pan on medium high heat with equal parts olive oil and butter. Make sure the pan is coated well so the salmon doesn’t stick. The butter is what will make your salmon nice and browned.

3) Cook for 5 minutes on each side until browned and flakey.

4) Plate and add a squeeze of lemon juice. Enjoy!
