HOMEMADE WEDGE SALAD

INGREDIENTS
• 1 head of iceberg lettuce
• A few slices of bacon
• 1 red onion
• 1 1/2 c. of mayo
• 2 tablespoon fresh lemon juice
• 1 teaspoon coarsely ground black pepper
• 1 teaspoon hot pepper sauce
• 1 c. crumbled blue cheese
DIRECTIONS
1) Make the dressing: mix 1 1/2 c. mayo, 2 tablespoons of lemon juice, 1 teaspoon of coarsely ground black pepper and 1 teaspoon of hot pepper sauce in a medium bowl. Next, add 1 c. of coarsely crumbled blue cheese and stir until blended. If too thick, thin it out with a buttermilk by the tablespoon to the desired consistency.
2) Cook bacon in skillet over medium heat until golden brown and crisp.
3) Cut iceberg lettuce into quarters and plate.
3) Crumple bacon into bits and add to the lettuce, dress and garnish with thinly sliced red onion. Enjoy!
